WHAT DO YOU SEE? Livelier bubbles without being aggressive, which form the crown and create very faint columns in the glass, with a deep intense garnet colour, presenting a good tear in the glass. WHAT DO YOU SMELL? Clean nose with no defects, intense, with hints of gummy, liquorice, candied fruit, and many hints of pastry and confectionery. WHAT DOES IT TASTE LIKE? It has a dry mouth, high acidity, retains that greenness of young wines but is very elegant. It maintains a good acidity from the elegant entry into the mouth to its well-balanced exit. There are balsamic nuances, hints of eucalyptus, and the tannins are slightly astringent without saturating the palate. WHAT TO PAIR IT WITH? Pure chocolate, game meat, stewed game, wild boar and venison, fig jam, roasted fruit such as pear or apple.
