Type of wine: Ancestral sparkling wine.

Vintage: 2020.

Variety: Palomino 100%.

Alcohol by volume: 11.5%.

Vineyards: grapes from the same plot in the Jerez countryside. Vineyards of 39 years old.

Type of harvest: manual with a selection table.

Fermentation and maceration: in stainless steel tanks at a variable temperature between 22ºC and 16ºC. 9 months of maceration with lees in the bottle.

Colour: greenish yellow

Bubbles: The bubbles are small and well-integrated, appearing in the glass forming a crown with a prolonged visual effect.

Nose: High aromatic intensity. Very clean and complex aromas. As soon as the wine is served, floral and fruity aromas, aromatic herbs and even lactic notes reach us. Fruity aromas. Very clean and varied. Tropical fruits such as banana that allies with the lactic and appears as banana yoghurt. Pineapple and citrus notes can also be distinguished, reminiscent of mandarins. Floral notes; white flowers with soft aromas that are not at all cloying. This Palomino grape wine has also been greatly influenced by the environment surrounding the winery. In fact, in this wine the aromas of aromatic herbs such as aniseed are even more intense and much more defined to the point that it seems as if we are walking in a garden.

Palate: In the mouth it is a very well structured wine. The acidity is balanced and enhanced by the carbonic gas, it is silky in the mouth and round, it reaches all parts of the mouth carrying the fruity aromas. It can be savoured and does not become heavy but cleanses the mouth, it is very fresh and citric. The aromas do not fade and the aftertaste is long, a very peculiar saline nuance can be detected in this wine.

Pairing: Acorn-fed ham, seafood, pate, something fatty, even Iberian secret, because the bubbles and acidity cleanse the mouth, blue cheese, fua, rice dishes and white and blue fish.

Serving temperature: 6-8ºC.
